  • 1 can (15 oz) chili beans (in sauce)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups shredded cheddar cheese
  • 2 cups shredded iceberg lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1 cup Fritos corn chips
  • 1 cup sour cream
  • 1/2 cup salsa

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Stir in the chili seasoning mix along with the chili beans, kidney beans, and diced tomatoes. Simmer for about 10-15 minutes until heated through.
  3. In a serving bowl, layer the shredded lettuce as your salad base.
  4. Spoon the chili mixture over the lettuce and top with cheddar cheese, cherry tomatoes, diced red onion, and optional black olives.
  5. Just before serving, sprinkle Fritos on top to maintain their crunchiness.
