  • 3 cups chickpeas
  • 16 oz pasta (such as rotini)
  • 2 cups cherry tomatoes
  • 1 cucumber
  • 1 green pepper
  • 1 red onion
  • 3 tbsp tahini
  • 3/4 cup red apple vinegar
  • 2.5 tbsp lemon juice
  • 2.5 tsp lemon zest
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1.5 tsp maple syrup
  • 1 tbsp Dijon mustard
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 400°F. Drain and pat dry chickpeas.
  2. Toss chickpeas with lemon juice, zest, garlic powder, oregano, salt, and pepper. Spread on a baking sheet and roast for 20-30 minutes until crispy.
  3. Cook the pasta according to package directions until al dente. Drain and rinse with cold water.
  4. Whisk together tahini, red apple vinegar, maple syrup, Dijon mustard, oregano, salt, and pepper for the dressing.
  5. Prepare vegetables: dice green pepper, slice cucumber and onion, halve cherry tomatoes.
  6. In a large bowl, combine cooled pasta with half the dressing. Add vegetables and roasted chickpeas; drizzle with remaining dressing.
  7. Chill in the refrigerator for at least 15 minutes before serving.
