Instructions

  1. Hard boil the eggs by placing them in cold water, bringing to a boil, then removing from heat and letting sit covered for 12 minutes. Transfer to an ice bath to cool.
  2. Peel the cooled eggs, halve them lengthwise, and place yolks in a mixing bowl. Mash yolks until smooth and mix in mayonnaise, mustard, salt, pepper, and chives until creamy.
  3. Use a piping bag or plastic bag with one corner snipped off to fill each egg white half with yolk mixture.
  4. Arrange filled egg halves upright on a platter to mimic tulips and decorate with fresh greens around the base.
