  • 1 tbsp lemon juice (for topping)
  • 1 tbsp cornstarch (for topping)
  • 2 tbsp water (for topping)
  • 1 cup heavy cream (for ganache)
  • 1.5 cups semi-sweet or dark chocolate (chopped for ganache)
  • 1 tbsp unsalted butter (optional for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a mixing bowl, whisk together flour, sugars, cocoa powders, baking powder, baking soda, and salt.
  3. Add softened butter, eggs, vanilla extract, oil, blackberry puree, and buttermilk; mix until smooth.
  4. Divide batter between pans and bake for 30 minutes or until a toothpick comes out clean.
  5. For the topping, simmer blackberries with sugar, lemon juice, cornstarch, and water until thickened.
  6. Prepare ganache by heating heavy cream and melting in chopped chocolate.
