  • 2 large celery stalks, finely diced
  • ½ medium red onion, finely diced
  • 2 medium carrots, shredded
  • ½ cup golden raisins
  • ½ cup fresh cilantro, chopped
  • 1 cup mayonnaise
  • 1 cup plain Greek yogurt
  • 2 to 3 tablespoons curry powder
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon turmeric
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente; drain and cool under cold water.
  2. While the pasta cooks, prepare the vegetables: dice celery and red onion, shred carrots, and chop cilantro.
  3. In a mixing bowl, combine mayonnaise, Greek yogurt, curry powder, lemon juice, honey/maple syrup, turmeric, salt, and pepper; whisk until smooth.
  4. Taste the dressing and adjust seasoning as needed.
  5. In a large bowl, combine cooled pasta with vegetables and plumped raisins; fold in the dressing gently.
  6. Cover and refrigerate for at least two hours before serving to allow flavors to meld.
