Creamy BLT Pasta Salad is a delightful summer dish that combines the fresh crunch of vegetables with the savory flavor of turkey bacon and a rich homemade ranch dressing.   • 12 ounces rotini or fusilli pasta
  • 8 slices turkey bacon, cooked crisp and chopped
  • 1 ½ cups cherry tomatoes, halved
  • 3 cups romaine lettuce, chopped
  • 3 green onions, thinly sliced
  • 1 cup shredded cheddar cheese
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ cup buttermilk (or whole milk for lighter version)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp fresh dill, chopped (or 1 tsp dried)
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried chives
  • Salt and black pepper to taste
  • 1 tbsp fresh lemon juice

Instructions

  1. Cook the pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. In a skillet over medium heat, cook turkey bacon until crisp. Drain on paper towels and chop.
  3. In a bowl, whisk together mayonnaise, sour cream, buttermilk, garlic powder, onion powder, dill, parsley, chives, salt and pepper. Stir in lemon juice.
  4. Combine cooled pasta with turkey bacon, tomatoes, lettuce, green onions, and cheese in a large bowl.
  5. Pour dressing over the salad and toss gently to combine.
  6. Refrigerate for at least 20 minutes before serving.
