  • 2 tablespoons tomato paste
  • 23 teaspoons chili powder
  • 2 teaspoons smoked paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 12 corn tortillas
  • Extra virgin olive oil for drizzling
  • 2 teaspoons dried parsley
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried chives
  • 1/2 teaspoon dried dill
  • 1 cup shredded Mexican cheese blend
  • Crema, avocado, cabbage, and cilantro for serving

Instructions

  1. Preheat the oven to 425°F.
  2. In a large skillet, heat olive oil over high heat and cook the ground meat with chopped onion and poblano until browned.
  3. Stir in tomato paste and spices; add water and simmer until thickened.
  4. Bake corn tortillas on baking sheets for 7 minutes until crispy.
