  • 1/2 cup unsalted butter (room temperature)
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon baking soda
  • 3 cups old-fashioned oats
  • 1.5 cups all-purpose flour
  • 2 cups chocolate chips

Instructions

  1. In a stand mixer, cream together solid coconut oil, butter, brown sugar, and granulated sugar until smooth. Beat in eggs until well combined.
  2. Add baking soda and oats into the mixture, mixing until just incorporated. Gradually stir in flour until no dry streaks remain.
  3. Chill the dough in the refrigerator for at least one hour.
  4. Preheat your oven to 350°F (175°C). Scoop out dough into balls and chill again briefly.
