  • 1 pound cooked chicken breast (cubed or shredded)
  • 1 pound dry pasta (shells or elbow)
  • 10 ounces evaporated milk
  • 4 tablespoons butter
  • 8 ounces pepper jack cheese (cubed)
  • 8 ounces Velveeta cheese (cubed)
  • 1 teaspoon ground mustard powder
  • 1 chipotle pepper in adobo sauce (finely chopped)
  • 1/2 teaspoon adobo sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a baking dish with cooking spray and bake the seasoned chicken breasts for about 30 minutes. Once cool, cube or shred the chicken.
  2. While the chicken is baking, cube the cheeses and let them sit at room temperature.
  3. In a Dutch oven, cook the pasta in salted water until tender, about 6 minutes, stirring frequently.
  4. Add evaporated milk and butter to the pasta; stir well and bring to a simmer.
