  • 4 1/2 cups bread flour (divided)
  • 3/4 cup salted butter (almost melted)
  • 1 1/2 cups packed brown sugar
  • 3 tablespoons cinnamon
  • 1/2 cup heavy cream (for pouring over the risen rolls)
  • 6 ounces cream cheese (softened)
  • 1/3 cup salted butter (softened)
  • 2 cups powdered sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. In a stand mixer, combine warm milk and yeast. Add eggs, melted butter, salt, cinnamon, and sugar. Mix in shredded carrots and coconut.
  2. Gradually add 4 cups of flour until incorporated; let rest for 5 minutes.
  3. Switch to the dough hook and knead on medium speed, adding more flour as needed until smooth and slightly tacky.
  4. Place in a greased bowl, cover, and let rise in a warm spot until doubled (about 30 minutes).
  5. Prepare the filling by mixing softened butter, brown sugar, and cinnamon.
  6. Roll out dough into a rectangle; spread filling evenly over it.
  7. Roll dough tightly into a log; slice into rolls and place in a greased baking pan.
  8. Allow rolls to rise again while preheating the oven to 350°F.
  9. Pour warmed heavy cream over risen rolls before baking for 27-30 minutes until golden brown.
  10. Prepare frosting by blending cream cheese with softened butter, then adding powdered sugar and vanilla extract.
