  • 34 lbs bone-in beef short ribs
  • ½ cup soy sauce
  • ¼ cup hoisin sauce
  • ¼ cup fruit juice (as mirin substitute)
  • 3 tbsp brown sugar
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • Sliced green onions for garnish

Instructions

  1. Preheat your oven to 275–300°F (135–150°C).
  2. Trim excess fat from the beef short ribs and pat them dry. Season generously with salt and pepper.
  3. Sear the ribs in a skillet over medium-high heat until browned on all sides.
  4. Combine soy sauce, hoisin sauce, fruit juice, brown sugar, garlic, ginger, and chili flakes in a mixing bowl.
  5. Place seared ribs in a Dutch oven or roasting pan. Pour the marinade over the ribs along with sliced onions and green onions.
  6. Cover tightly and roast for 3–4 hours, basting occasionally.
  7. After roasting, reduce the braising liquid in a skillet until thickened.
  8. Optionally broil for extra caramelization before serving with rice or noodles.
