  • 200g Biscoff cookies
  • 6 tbsp unsalted butter, melted (85g)
  • 32 oz full-fat cream cheese, room temp (4 8oz blocks or 907g)
  • 1 cup granulated sugar (200g)
  • 4 large eggs, room temp
  • 1/3 cup heavy cream, room temp (80g)
  • 1/2 cup sour cream, room temp (120g)
  • 1 tbsp cornstarch
  • 2/3 cup salted caramel sauce
  • 1 cup granulated sugar (200g) for caramel
  • 5 tbsp unsalted butter, room temp and sliced (70g) for caramel
  • 1/2 cup heavy cream, warmed up (120g) for caramel
  • 1 tsp vanilla extract for caramel
  • 1 tsp salt for caramel
  • Optional: Flaky sea salt for garnish

Instructions

  1. For the salted caramel sauce, melt granulated sugar over medium heat until amber, then add butter and warmed heavy cream until smooth. Stir in vanilla extract and salt, then set aside to cool.
  2. Preheat oven to 350°F (175°C). Crush Biscoff cookies and mix with melted butter; press into the bottom of a springform pan.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Incorporate heavy cream, sour cream, cornstarch, and cooled caramel sauce.
  4. Pour filling over crust in the springform pan and bake for 60-75 minutes until slightly wobbly in the center. Let cool in the oven with the door ajar for an hour.
  5. Chill for at least four hours before serving; drizzle with remaining salted caramel sauce and sprinkle with flaky sea salt.
