  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 medium zucchinis (sliced)
  • 1 cup cherry tomatoes (halved)
  • ½ red onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (grated)
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and season with oregano, basil, smoked paprika, salt, black pepper, and optional red pepper flakes. Toss well to coat.
  3. Transfer mixture to a baking dish and spread evenly. Bake for 25 minutes.
  4. Remove from oven and sprinkle with mozzarella and Parmesan cheese. Return to oven for an additional 5 minutes or until cheese is melted.
