Ingredients

Scale
  • 910 large organic lemons
  • 800 g sugar
  • 1 liter water

Instructions

  1. Prepare a clean, large mason jar.
  2. Peel the lemons carefully using a vegetable peeler, avoiding the bitter white pith.
  3. Place the lemon peels in the jar and cover with liquid (fruit juice or broth). Mash gently with a wooden spoon.
  4. Seal the jar tightly and store it in a dark, cool place for at least one week (up to one month) to infuse.
  5. After steeping, dissolve sugar in water over medium heat to create syrup; let cool.
  6. Strain the infused liquid through cheesecloth or coffee filters into another clean pot.
  7. Mix cooled syrup with strained liquid, then bottle your limoncello.
