  • 4 whole chicken leg quarters
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon chili flakes
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon garlic (minced)
  • 1 tablespoon ginger (minced)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil.
  2. In a mixing bowl, whisk together olive oil, paprika, onion powder, chili flakes, black pepper, salt, soy sauce, oyster sauce, lemon juice, garlic, and ginger.
  3. Score each chicken leg quarter three times down to the bone on both the thigh and drumstick.
  4. Arrange the scored chicken on the prepared baking sheet without overlapping.
  5. Apply half of the marinade over the chicken and massage it into the skin and cuts.
  6. Bake in the preheated oven for 30 minutes.
  7. Remove from the oven and add the remaining marinade; return to bake for another 15 minutes until fully cooked.
