  • 2 cups whole milk (500 ml)
  • 1 cup sugar (200 g)
  • 4 large egg yolks
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • Thin strip of lemon peel (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. Line each cup of a muffin tin with the puff pastry.
  3. In a saucepan over medium heat, combine milk, sugar, and flour; stir until thickened.
  4. In a separate bowl, whisk egg yolks with vanilla and optional lemon peel. Gradually add half of the hot milk mixture while whisking.
  5. Pour this back into the saucepan with the remaining milk mixture and stir well.
  6. Fill each pastry-lined cup with custard until just full.
  7. Bake for about 15 minutes until tops are dark golden brown.
