  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons flour
  • 1 tablespoon neutral oil
  • 1 yellow onion, chopped
  • 3 garlic cloves
  • 6 guajillo chilies, stems and seeds removed
  • 4 ancho chilies, stems and seeds removed
  • 3 chile de arbol, stems and seeds removed
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon dried Mexican oregano
  • 2 1/2 cups beef broth
  • 2 fresh bay leaves
  • Corn tortillas, warmed
  • White onion, diced
  • Cilantro, chopped
  • Radishes, sliced
  • Lime wedges

Instructions

  1. Toast the dried chilies in a dry skillet for 2-3 minutes until fragrant. Transfer them to a saucepan with chopped onion and garlic, cover with water, and simmer for 10 minutes until softened.
  2. Blend the softened chilies with onion, garlic, soaking liquid, cumin, coriander, oregano, and beef broth until smooth. Season with salt and pepper.
  3. Cut beef into 2-inch cubes; season with salt and pepper before tossing with flour. In a Dutch oven, heat oil over medium-high heat and brown the beef in batches.
  4. Return all beef to the pot, pour just enough sauce over to cover, add bay leaves, cover, and simmer on low heat for 2 hours until tender.
  5. Skim oil before serving with warm tortillas alongside diced onion, cilantro, sliced radishes, and lime wedges.
