  • 2 medium zucchini, sliced lengthwise
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 190C (375F) and lightly grease a baking dish.
  2. Layer zucchini slices in the baking dish and sprinkle with dried oregano.
  3. Spread half of the ricotta over the zucchini, then add half of the marinara sauce.
  4. Repeat layering with remaining zucchini, ricotta, and marinara sauce.
  5. Top with shredded mozzarella cheese.
  6. Cover with foil and bake for 25-30 minutes. Uncover and bake for an additional 10-15 minutes until golden brown.
  7. Let cool briefly, garnish with fresh basil, and serve warm.
