  • 4 medium zucchinis
  • 1 lb lean ground turkey
  • 1 cup low-carb marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 large eggs
  • 2 cloves garlic
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips. Sprinkle with salt and let sit to draw out moisture; pat dry.
  3. In a large skillet, heat olive oil over medium heat. Cook ground turkey until browned, then add garlic and herbs; stir in marinara sauce and simmer.
  4. In a bowl, mix ricotta cheese, mozzarella (reserve some), Parmesan cheese, eggs, herbs, salt, and pepper until smooth.
  5. In a baking dish, layer meat sauce, zucchini strips, cheese mixture; repeat layers ending with meat sauce and reserved mozzarella on top.
  6. Cover with foil and bake for 30 minutes; remove foil and bake for another 15 minutes until golden brown.
  7. Let rest for 10–15 minutes before serving.
