  • 2 celery stalks (sliced)

  • 1 cup heavy cream
  • 2 cups cheddar cheese (shredded)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional)
  • Fresh parsley for garnish
  • Extra shredded cheddar cheese for garnish

Instructions

  1. 1. Brown the ground beef in a skillet over medium-high heat until cooked through. Drain excess fat and add chopped onion and minced garlic; cook until onions are translucent.
  2. 2. Transfer the beef mixture to the crockpot. Add diced potatoes, sliced carrots, sliced celery, chicken or beef broth, and seasonings. Stir well.
  3. 3. Cover and cook on low for 6–8 hours or high for 3–4 hours until vegetables are tender.
  4. 4. In the final 20 minutes of cooking, stir in heavy cream and cheddar cheese until melted. Adjust thickness with cornstarch if desired.
  5. 5. Serve hot, garnished with fresh parsley and extra cheese.
