  • 270 ml coconut milk
  • 170 g white chocolate
  • 226 g butter (or dairy-free alternative)
  • 90 g shredded coconut
  • 2 tsp white vinegar (or lemon juice)
  • 80 ml vegetable oil
  • 2 tsp vanilla extract (or 1 tsp almond extract)
  • 80 g almond flour (finely ground)
  • 2½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 150 g powdered sugar (or icing sugar)
  • 8 g cornstarch
  • 186 g coconut (shredded or desiccated)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. In a mixing bowl, combine the milk and vinegar; let sit for 5 minutes.
  3. Add sugar, oil, vanilla extract, all-purpose flour, almond flour, baking powder, baking soda, and salt; mix until combined.
  4. Gradually incorporate the coconut milk.
  5. Divide batter between prepared pans; bake for 30-35 minutes or until a toothpick comes out clean.
  6. Cool cakes before frosting with white chocolate buttercream and layering the coconut filling.
