  • 1/2 cup ditalini pasta or large ringed pasta
  • 8 oz sweet Italian turkey sausage
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 3 carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 3/4 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper, to taste
  • 1 (15-ounce) can great northern beans, drained and rinsed
  • 1 (15-ounce) can dark red kidney beans, drained and rinsed

Instructions

  1. In a large Dutch oven coated with cooking spray, brown the turkey sausage over medium-high heat for about 3-5 minutes. Drain excess fat.
  2. Add minced garlic, onion, carrots, and celery to the pot; sauté until tender, approximately 3-4 minutes.
  3. Stir in chicken broth, crushed tomatoes, and dried herbs. Bring to a boil; reduce heat and simmer for 10-15 minutes.
  4. Add uncooked pasta and both types of beans; stir until heated through.
  5. Serve hot and enjoy!
