  • 3 slices chopped turkey bacon
  • 1 cup beef steak (cut into 1" cubes)
  • 2 skinless, boneless chicken thighs (cut into 1" cubes)
  • 1 chicken breast (cut into 1" cubes)
  • 1 large yellow onion (chopped)
  • 1 green bell pepper (chopped)
  • 2 ribs celery (chopped)
  • 3 cloves garlic (minced)
  • 1 (10 ounce) can diced tomatoes and chilies
  • 1.5 cups chicken broth
  • 1 (10 ounce) can cream of chicken soup
  • 1 (10 ounce) can cream of mushroom soup

Instructions

  1. In a Dutch oven over medium-high heat, cook chopped turkey bacon with onion, bell pepper, and celery until softened.
  2. Add minced garlic and sauté for another 3 minutes until fragrant.
  3. Stir in cubed beef steak and cook until browned, about 20 minutes.
  4. Add cubed chicken thighs, chicken breast, diced tomatoes with chilies, and seasoning; cook for an additional 15 minutes.
  5. Pour in chicken broth, cream soups, and water; simmer for another 20 minutes.
  6. Mix in dry pasta and bring to a boil.
  7. Turn off heat after boiling; cover and bake in a preheated oven at 300°F for one hour without opening the lid.
  8. Let rest for an additional ten minutes before serving topped with chopped green onions.
