  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth
  • 1/3 cup dairy-free cream
  • 1/2 tsp dried marjoram
  • 1 pinch of nutmeg
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Sauté diced onion in oil over medium heat for about 3 minutes until soft. Add minced garlic, celery, carrots, chopped potatoes, and spices; sauté for an additional minute.
  2. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes until the vegetables are tender.
  3. Blend half of the soup using an immersion blender until smooth. Combine back with the unblended portion and stir in dairy-free cream.
  4. Adjust seasoning if needed, then serve hot garnished with fresh parsley.
