  • 2 cups cherry tomatoes
  • 1 cup cucumber
  • ½ cup olives
  • ½ cup sun-dried tomatoes
  • ½ cup corn
  • 1 shallot
  • 3 tablespoons parsley
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons mustard
  • 1½ tablespoons maple syrup
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Cook the farfalle pasta in salted boiling water until al dente, then drain and rinse under cold water.
  2. In a large bowl, combine cooked pasta with white beans, corn, cherry tomatoes, cucumber, olives, sun-dried tomatoes, chopped shallot, and parsley.
  3. For the dressing, whisk together olive oil, lemon juice, mustard, maple syrup, oregano, garlic powder, salt, and black pepper in a small bowl until well combined.
  4. Pour the dressing over the salad mixture and toss gently until everything is evenly coated. Adjust seasoning if necessary.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
