  • 1/2 cup maple syrup

  • 1 cup coconut cream
  • 1/2 cup soaked cashews
  • 1/2 cup lemon juice
  • 2 teaspoons lemon zest
  • 1/2 cup maple syrup
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup cornstarch
  • Pinch of salt
  • Pinch of turmeric (optional, for color)

Instructions

  1. Prepare the crust by mixing gluten-free flour, vegan butter, maple syrup, vanilla extract, and salt in a bowl until combined.
  2. Preheat your oven to 350°F (175°C) and line a square baking pan with parchment paper.
  3. Press the crust mixture into the baking pan evenly and bake for 15-20 minutes until golden brown. Allow it to cool.
  4. While cooling, blend together coconut cream, soaked cashews, lemon juice, zest, maple syrup, granulated sugar, vanilla extract, cornstarch, salt, and turmeric until smooth.
  5. Pour the filling into a saucepan over medium heat; stir continuously for 4-6 minutes until thickened.
  6. Pour the filling over the cooled crust and refrigerate for at least 4-6 hours or overnight until set.
  7. Slice into squares and serve.
