  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 green pepper, chopped
  • 1 medium carrot, grated
  • 56 medium tomatoes, diced (or one 20 oz can)
  • 5 tbsp tomato paste
  • 2 cups water or vegetable broth
  • 4 cups cooked beans (e.g., kidney, black beans)
  • 2 tsp coconut sugar (or sub brown sugar)
  • 1 tsp ground cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 12 hot red chili peppers (optional)
  • 2 tsp oil for sautéing

Instructions

  1. In a large pot over medium heat, add oil and sauté the chopped onion and green pepper for about 5 minutes. Add minced garlic and cook for another 1-2 minutes.
  2. Stir in diced tomatoes and sauté until softened (3-5 minutes).
  3. Add tomato paste, water/vegetable broth, cooked beans, and spices to the pot. Bring to a simmer and cook for about 30 minutes.
  4. For creaminess (optional), blend part of the chili using an immersion blender.
  5. Serve hot over rice or with bread.
