  • 1 1/2 cup almond flour
  • 1/4 cup oat flour
  • 1/4 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the base layer, mix almond flour, oat flour, and salt in a bowl. Add melted coconut oil, maple syrup, and vanilla extract; mix until combined. Press into a greased 8×8 baking dish.
  3. In a pot, combine berries, maple syrup, and water over low heat until softened. Mash the mixture and stir in cornstarch; simmer until thickened.
  4. For the crumble topping, mix oats, oat flour, almond flour, salt, melted coconut oil, maple syrup, and vanilla extract in a bowl.
  5. Spread the berry mixture over the base layer in the baking dish and top with crumble mixture. Bake for 25 minutes.
  6. Let cool completely before slicing into squares.
