  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon lemon juice
  • 1/4 cup unsalted butter, browned

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. For the crust: Combine graham cracker crumbs, sugar, and salt in a bowl. Stir in melted butter until mixed; press into the bottom of the springform pan and refrigerate.
  3. For the filling: Beat softened cream cheese until smooth. Add sugar and flour; mix well. Incorporate vanilla bean paste and extract before adding eggs one at a time. Finally, stir in sour cream and lemon juice.
  4. Make brown butter by melting additional unsalted butter in a saucepan over medium heat until golden brown; let cool slightly before mixing into the batter.
  5. Pour filling into crust and bake for about 55–60 minutes or until edges are set with a slightly jiggly center. Cool gradually in the oven with the door ajar for about an hour, then refrigerate for at least four hours before serving.
