  • 2 tablespoons olive oil
  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)

Instructions

  1. 1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Season the beef with salt and pepper and sear in batches until browned on all sides. Remove and set aside.
  2. 2. In the same pot, sauté onion until translucent. Add garlic, carrots, and celery; cook for about 5 minutes until softened.
  3. 3. Stir in tomato paste and cook for about 2 minutes until darkened slightly. Add diced tomatoes with their juices.
  4. 4. Deglaze the pan with dry apple vinegar; return seared beef to the pot along with beef stock and rosemary.
  5. 5. Bring to a boil, reduce heat to low, cover, and simmer for 2–3 hours until beef is tender.
