  • 3 1/3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup lukewarm water
  • 3 tablespoons olive oil (plus more for brushing)
  • 4 cups baby spinach leaves (roughly chopped)
  • 2 tablespoons olive oil
  • 1 medium yellow onion (finely chopped)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • 1/2 teaspoon Aleppo pepper (or pul biber)
  • 1 cup drained and crumbled feta

Instructions

  1. In a mixing bowl, combine the flour and salt. Create a well in the center and add lukewarm water and olive oil. Mix until a rough dough forms.
  2. Knead the dough on a floured surface for about 2-3 minutes until smooth. Place it in an oiled bowl and cover with a damp towel; let rest for 20 minutes.
  3. For the filling, mix chopped spinach, onions, olive oil, salt, black pepper, and Aleppo pepper in another bowl. Add crumbled feta and combine well.
  4. Divide rested dough into six pieces; roll each piece into thin circles about 10½ inches in diameter.
  5. Place half a cup of filling on one half of each circle, fold over to seal, then pat down gently to remove air bubbles.
  6. Heat a non-stick pan over medium-high heat and cook each gözleme for about one minute on each side until lightly browned.
  7. Brush with olive oil before serving warm or at room temperature.
