  • 1/2 cup grated parmesan
  • 1 large whole egg plus 1 yolk
  • 1 1/2 pounds ground turkey
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil or avocado oil for frying
  • 2 tablespoons ghee or unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup finely minced onion
  • 6 cloves garlic, pressed
  • 2 teaspoons Italian seasoning
  • 15 ounce can organic pumpkin puree
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, combine breadcrumbs and milk; let sit for 3 minutes.
  3. Mix in onion, garlic, sage, parsley, Italian seasoning, and Parmesan until well combined.
  4. Gently fold in ground turkey and season with salt and pepper; mix until just combined.
  5. Shape mixture into meatballs and chill on a parchment-lined platter for 20 minutes.
  6. Heat oil in a skillet over medium-high; cook meatballs until browned on all sides (about 10 minutes).
  7. In the same skillet, melt ghee with olive oil; sauté onion and garlic until softened.
  8. Stir in pumpkin puree and chicken stock; simmer for 2–3 minutes before whisking in Parmesan cheese and cream.
  9. Return meatballs to sauce; heat through before serving.
