  • 1 medium red onion (minced)
  • 2 large garlic cloves (finely chopped)
  • 700 grams green peas (fresh or frozen)
  • 500 grams potatoes (peeled and cut into chunks)
  • 34 small zucchinis (cut into pieces)
  • 2 medium carrots (sliced)
  • 3 teaspoons tomato paste
  • 2 medium-large ripe tomatoes (diced)
  • 23 tablespoons fresh dill (finely chopped)
  • Sea salt
  • 400 ml hot water or vegetable stock

Instructions

  1. Heat olive oil in a medium pot over moderate heat until shimmering.
  2. Add minced onion and garlic; sauté until soft.
  3. Stir in the potatoes, zucchini, peas, and carrots; cook for about 5 minutes.
  4. Mix in tomato paste and cook for another minute.
  5. Add diced tomatoes; season with sea salt and pepper.
  6. Pour in hot water or vegetable stock; cover and simmer on low heat for 40 to 50 minutes until vegetables are tender.
  7. Stir in remaining olive oil and dill; adjust seasoning if needed.
  8. Let sit for about 15 minutes before serving warm with a sprinkle of feta cheese.
