  • 8 ounces of pasta (rotini, fusilli, or penne)
  • 2 medium zucchinis (sliced into rounds)
  • 2 cups of cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • 3 tablespoons of olive oil
  • ¼ cup of fresh basil (chopped)
  • Salt and black pepper (to taste)
  • Red pepper flakes (optional)

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the zucchini for 3-4 minutes until golden brown and tender; remove from skillet.
  3. In the same skillet, add the remaining olive oil and minced garlic; sauté until fragrant (about 30 seconds). Add halved cherry tomatoes and cook for 5-7 minutes until softened.
  4. Return zucchini to the skillet along with cooked pasta. Toss together; add reserved pasta water if needed for consistency.
  5. Stir in chopped basil and season with salt, black pepper, and optional red pepper flakes.
  6. Serve warm and enjoy!
