  • 8 ounces pasta (rotini, fusilli, or penne)
  • 2 medium zucchinis (sliced)
  • 2 cups cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • 3 tablespoons olive oil
  • ¼ cup fresh basil (chopped)
  • Salt and black pepper (to taste)
  • Red pepper flakes (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve ½ cup of the cooking water before draining.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté sliced zucchini for 3-4 minutes until golden brown, then set aside.
  3. In the same skillet, add remaining olive oil and minced garlic; sauté for about 30 seconds. Add halved cherry tomatoes and cook for 5-7 minutes until softened.
  4. Return zucchini to the skillet with tomatoes; add cooked pasta and toss to combine. If needed, add reserved pasta water for desired consistency.
  5. Stir in chopped basil, season with salt and pepper, and serve warm.
