  • 1/2 cup extra virgin olive oil
  • 1/4 cup chicken sparkling grape juice vinegar
  • 1 tablespoon honey
  • 1/2 shallot, finely chopped
  • 1 clove garlic, grated
  • 1 teaspoon lemon zest
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh thyme
  • red pepper flakes (to taste)
  • kosher salt (to taste)
  • black pepper (to taste)
  • 1 1/22 cups cherry tomatoes, halved if large
  • 23 peaches, sliced into wedges
  • 1 cup pitted fresh cherries
  • 8 ounces burrata cheese, at room temperature
  • 1/4 cup toasted pumpkin seeds (or other nut/seed)

Instructions

  1. In a glass jar, combine olive oil, vinegar, honey, chopped shallot, grated garlic, lemon zest, and fresh herbs. Shake until smooth.
  2. In a mixing bowl, toss the cherry tomatoes, peach wedges, and pitted cherries with one-third of the vinaigrette. Let sit for 15 minutes.
  3. Break apart burrata into pieces around the tossed salad. Drizzle with remaining vinaigrette and sprinkle with toasted pumpkin seeds.
  4. Serve immediately alongside grilled or toasted bread.
