  • 2/3 cup (135 grams) granulated sugar (plus 3 tablespoons (40 grams) for rolling the cookies)
  • 2 large egg yolks (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 2 and 1/3 cups (290 grams) all-purpose flour (spooned & leveled)
  • 1/2 cup strawberry or apricot jam

Instructions

  1. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Cream together softened butter and sugar in a mixer until well combined.
  3. Add egg yolks, vanilla extract, and salt; mix thoroughly.
  4. Gradually incorporate flour until the dough comes together.
  5. Roll tablespoon-sized portions into balls, optionally rolling in sugar.
  6. Create indentations in each ball and fill with jam.
  7. Bake for 12-14 minutes or until lightly browned on the bottom. Cool before enjoying.
