  • 3 lbs goat meat
  • 45 tbsp curry powder
  • ½ cup green seasoning
  • ½ Scotch bonnet pepper (adjust to taste)
  • 2 medium potatoes (cubed)
  • 2 tbsp adobo
  • 3 tbsp complete seasoning
  • 3 tbsp black pepper
  • 1 tbsp jerk seasoning
  • 2 tbsp onion powder
  • 1 tsp cayenne pepper
  • 1 tsp oregano
  • 3 pegs garlic (plus one more to add to the pot)
  • 6 pimento seed (all spice)
  • water (as needed)
  • 1/4 cup onion
  • 1/4 cup sweet pepper
  • 3 stems thyme
  • 2 tbsp ginger

Instructions

  1. Rinse goat meat in a vinegar-water mixture and soak for 15 minutes; then rinse again.
  2. In a mixing bowl, combine dry seasonings and rub them into the meat; refrigerate overnight.
  3. Brown the marinated meat in a hot pot with water and crushed garlic.
  4. Add water, onions, sweet peppers, thyme, ginger, and Scotch bonnet; cover and simmer for 2-3 hours on low heat.
  5. When meat is tender, add cubed potatoes; season to taste and simmer until potatoes are cooked through.
