  • 1/2 cup water
  • 4 cups white sugar
  • 1/2 cup salted butter
  • 2 cups corn syrup
  • 2 (12-ounce) cans evaporated milk
  • 1 tablespoon vanilla extract
  • 1 and 1/2 teaspoons kosher salt

Instructions

  2. Chill apples in the refrigerator for at least 30 minutes.
  3. In a heavy-bottomed pot, combine water and sugar; bring to a boil until dissolved.
  4. Reduce heat and let bubble until it turns amber (about 8-10 minutes).
  5. Stir in butter until melted, then add corn syrup and bring back to a boil.
  6. Gradually whisk in evaporated milk over about 10 minutes, boiling until reaching 238°F (20-25 minutes).
  7. Remove from heat, stir in salt and vanilla, and let cool slightly.
  8. Dip chilled apples into caramel, letting excess drip off. Roll in toppings if desired.
