  • 1 whole yellow onion (with skin if organic)
  • 2 green onions or 1 Korean leek (for broth)
  • 2 thick slices of ginger
  • 1/2 medium radish, quartered
  • 2 tablespoons chopped garlic
  • 1 tablespoon soy sauce (guk ganjang)
  • 1.5 teaspoons sea salt

Instructions

  1. In a large pot, combine beef short ribs, water, yellow onion, green onions or leek, ginger slices, and optional green onion roots.
  2. Bring to a boil over medium-high heat. Reduce heat to low and simmer gently for about 90 minutes.
  3. Add quartered radish and chopped garlic; stir in soy sauce and sea salt. Simmer for an additional 15-20 minutes until radish is tender.
