  • 200 g farine T55
  • 140 g de poudre d’amandes (ou d’amandes entières mixées)
  • 75 g sucre
  • 150 g de margarine
  • 50 cL de lait de soja
  • 30 g de fécule de maïs
  • 75 g sucre blond
  • 3 g d’agar agar
  • 1 poignée de sauge ananas fraîche (ou de verveine)
  • 1 c. à café de vanille liquide
  • 250 g de fraises
  • 60 g de margarine

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine flour, almond powder, sugar, and softened margarine. Mix until you achieve a crumbly texture.
  3. Press this mixture into a tart pan evenly across the bottom and up the sides.
  4. Bake in the preheated oven for about 15 minutes or until lightly golden.
  5. In a saucepan, heat soy milk over medium heat until warm but not boiling.
  6. In another bowl, whisk together corn starch, sugar blond, agar agar, and vanilla extract.
  7. Gradually add this dry mixture to the warm soy milk while continuously whisking to prevent lumps.
  8. Add chopped fresh pineapple sage to the mixture and stir well. Cook this mixture on low heat until it thickens into a custard consistency.
  9. Once your biscuit base has cooled slightly, pour the custard filling over it. Spread evenly with a spatula for a smooth surface.
  10. Allow it to cool at room temperature before refrigerating for at least two hours to set properly.
  11. Wash and hull your strawberries. Slice them as desired – whole or in halves – depending on your presentation preference.
  12. Once set, top your tart with sliced strawberries before serving. Garnish with extra pineapple sage leaves if desired.
