  • 1 cup fresh pineapple chunks
  • 1 cup bell peppers, chopped
  • 3 green onions, chopped (divided)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce (gluten-free if needed)
  • 1 1/2 cups chicken broth
  • 12 tablespoons olive oil or sesame oil
  • 1 tablespoon brown sugar or honey

Instructions

  1. Prepare your ingredients by dicing the chicken, chopping bell peppers and green onions, mincing garlic and ginger, and draining pineapple chunks if using canned.
  2. Heat oil in a large skillet over medium-high heat. Add garlic and ginger; sauté until fragrant.
  3. Add diced chicken; cook until golden brown outside but not fully cooked through (around 5-6 minutes).
  4. Stir in bell peppers and half of the green onions; cook for about 2 minutes. Add pineapple chunks to warm through.
  5. Pour in rice, soy sauce, chicken broth, and brown sugar or honey; stir well. Bring to a gentle boil, reduce heat to low, cover with a lid.
  6. Simmer for 18-20 minutes until rice is tender and liquid is absorbed. Fluff with a fork before serving, garnished with remaining green onions.
