- 2 ripe peaches, sliced
- 3 corn cobs, shucked
- ½ small red onion, thinly sliced
- 3 Tbsp cilantro, chopped
- 8oz halloumi cheese, sliced
- 3 Tbsp fresh lime juice
- 3 tsp honey
- Cracked black pepper to taste
- In a mixing bowl, whisk together lime juice, honey, and cracked black pepper. Set aside.
- Boil a large pot of water over medium-high heat; add corn cobs and boil for 1-2 minutes until tender. Remove and cool.
- In a non-stick frying pan over medium-high heat, cook halloumi slices for 1-2 minutes on each side until golden brown; cool.
- Cut kernels off cooled corn and slice halloumi in half.
- In a large mixing bowl, combine corn kernels, halloumi pieces, peaches, red onion, and cilantro.
- Pour dressing over salad mixture and toss gently until well coated. Serve immediately.
