Ingredients

  • 2 ripe peaches, sliced
  • 3 corn cobs, shucked
  • ½ small red onion, thinly sliced
  • 3 Tbsp cilantro, chopped
  • 8oz halloumi cheese, sliced
  • 3 Tbsp fresh lime juice
  • 3 tsp honey
  • Cracked black pepper to taste

Instructions

  1. In a mixing bowl, whisk together lime juice, honey, and cracked black pepper. Set aside.
  2. Boil a large pot of water over medium-high heat; add corn cobs and boil for 1-2 minutes until tender. Remove and cool.
  3. In a non-stick frying pan over medium-high heat, cook halloumi slices for 1-2 minutes on each side until golden brown; cool.
  4. Cut kernels off cooled corn and slice halloumi in half.
  5. In a large mixing bowl, combine corn kernels, halloumi pieces, peaches, red onion, and cilantro.
  6. Pour dressing over salad mixture and toss gently until well coated. Serve immediately.
