  • 9-inch baked tart crust
  • 1 pint fresh strawberries
  • 2 tablespoons strawberry or apricot jam

Instructions

  2. In a stand mixer, whisk egg yolks and remaining sugar until light and fluffy.
  3. Whisk cornstarch into the remaining milk until smooth; combine with the egg mixture.
  4. Cook this mixture over low heat, whisking constantly until thickened, about 4 minutes. Stir in butter and cool.
  5. Spread chilled pastry cream evenly over the tart crust.
  6. Slice strawberries and arrange over the pastry cream in overlapping circles.
  7. Warm jam with water for glazing; brush over strawberries before chilling.
