  • 2 tablespoons granulated sugar
  • 1 cup heavy cream
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon pure vanilla extract (optional)
  • Vanilla cake or biscotti cookies, cut into small pieces
  • 1 cup lemon curd

Instructions

  1. In a medium bowl, combine the chopped strawberries with 2 tablespoons of sugar. Mix well and let sit for 15 minutes at room temperature to macerate.
  2. Using a mixer fitted with the whisk attachment, add heavy cream, 2 tablespoons of sugar, and vanilla (if using). Whisk on high speed until medium peaks form.
  3. Start by placing a few pieces of cake or cookie at the bottom of each glass. Spoon a dollop of lemon curd on top of the cake layer.
  4. Add a layer of macerated strawberries along with their juices. Top with a generous layer of whipped cream.
  5. Repeat layering once more until glasses are filled to your liking. For decoration, top each parfait with a fresh strawberry if desired.
  6. If not serving immediately, cover and store in the refrigerator for several hours before serving.
