  • 2 cups sliced strawberries
  • 1/2 red onion (thinly sliced)
  • 1/4 cup dried cranberries
  • 1/2 cup feta cheese crumbles
  • 1/2 cup glazed pecans
  • 2 grilled chicken breasts (sliced)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons white sugar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 3/4 cup olive oil
  • 1 1/2 cups pecan halves
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Prepare the dressing by whisking together apple cider vinegar, honey, white sugar, Dijon mustard, salt, pepper, and olive oil in a bowl until emulsified.
  2. For the glazed pecans, combine water, white sugar, salt, black pepper, and cayenne pepper in a saucepan over medium heat. Add pecans after boiling for 30 seconds. Spread on a greased baking sheet and bake at 350°F for 12–14 minutes.
  3. In a large salad bowl, mix together the mixed greens, sliced strawberries, thinly sliced red onion, dried cranberries, feta cheese crumbles, sliced grilled chicken breasts, and glazed pecans.
  4. Drizzle dressing over the salad just before serving.
