  • 1 (15.25 oz) strawberry cake mix
  • 1 large egg
  • ½ cup salted butter, melted
  • 3 tbsp heavy cream
  • 1 cup white chocolate chips
  • 8 oz cream cheese, room temperature
  • ⅓ cup powdered sugar
  • ⅓ cup sour cream
  • 1 tsp vanilla extract
  • 8 oz tub whipped topping
  • 36 vanilla sandwich cookies
  • ¼ cup strawberry syrup

Instructions

  1. Preheat your oven to 350°F (177°C) and lightly grease a 9×13-inch baking dish.
  2. In a bowl, combine the strawberry cake mix, egg, melted butter, and heavy cream until smooth. Fold in white chocolate chips and spread evenly in the prepared dish.
  3. Bake for 18–23 minutes until a toothpick comes out clean. Allow to cool completely.
  4. For the frosting, beat together cream cheese and powdered sugar until fluffy. Mix in sour cream and vanilla extract followed by folding in whipped topping.
  5. Spread the frosting over cooled brownies.
  6. Pulse vanilla sandwich cookies in a food processor until coarsely crumbled; mix with strawberry syrup and sprinkle over frosting.
  7. Garnish with fresh strawberries if desired, cut into squares, and serve.
