  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar (for filling)
  • 8 oz semi-sweet chocolate (chopped)
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two greased and floured 9-inch round cake pans.
  2. In a mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine eggs, milk, oil, and vanilla. Mix into dry ingredients until just combined.
  4. Carefully stir in boiling water until smooth; the batter will be thin.
  5. Divide the batter between the prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. Let the cakes cool before transferring to a cooling rack.
  7. For the strawberry filling, heat chopped strawberries with sugar until juices are released. Stir in lemon juice and cornstarch mixture until thickened; cool before using.
  8. Make ganache by pouring hot cream over chopped chocolate; let sit then stir until smooth.
  9. Assemble the cake by layering with strawberry filling between cakes and topping with ganache.
