  • 1 box white cake mix (15.25 oz)
  • 1 box strawberry-flavored vegan gelatin (3 oz, like Jell-O)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 23 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream (cold)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three round cake pans.
  2. In a large bowl, mix the cake mix and strawberry vegan gelatin powder. Add eggs, milk, oil, sour cream, and mashed strawberries, then beat until fluffy.
  3. Divide batter among the pans and bake for 22-28 minutes or until a toothpick comes out clean.
  4. Cool cakes in pans for 10 minutes before transferring to wire racks.
  5. For frosting, beat together cream cheese and butter until smooth. Gradually add powdered sugar and whip in cold heavy cream until fluffy.
