  • 800g strawberry purée
  • 760g sugar
  • 20g pectin
  • 10g tartaric acid
  • 2 tsp Tabasco
  • 50g caster sugar (for coating)

Instructions

  1. In a large pan, combine the strawberry purée and 720g sugar; bring to a boil over medium heat.
  2. In a mixing bowl, mix pectin with 40g sugar. Once the strawberry mixture is boiling, add the pectin mixture while stirring continuously.
  3. Heat until reaching 104ºC using a thermometer. Remove from heat and stir in tartaric acid and Tabasco.
  4. Line a baking tray with cling film or nonstick spray; pour in the jelly mixture evenly. Refrigerate for at least 4 hours to set.
  5. Cut into 2cm squares and roll each square in caster sugar before serving.
